About Our Chicken Biryani

Biryani is not a fried rice — it is a layered dish, and we cook it that way. Chicken is marinated in yogurt, ginger, garlic, mint and biryani masala, then layered with par-cooked basmati, saffron milk, browned onions and fresh coriander so the rice steams in the aroma of the meat.

How We Layer Our Chicken Biryani

Basmati is soaked, then boiled with cardamom, cloves, bay leaf and star anise until just short of done. It is layered over the marinated chicken with saffron, birista onions, mint and a spoon of ghee, then covered and left on a low flame so the steam does the work. We open the pot only when it reaches your table or your takeout bag.
