Butter chicken — murgh makhani — is the North Indian classic that made Delhi’s tandoor kitchens famous, and it is the most-ordered plate on our menu in Northeast Calgary. Boneless chicken is marinated overnight in yogurt, ginger, garlic and garam masala, charred in the tandoor, then finished in a tomato gravy enriched with butter, cream and a pinch of hand-crushed kasuri methi.
The result is a curry that is rich without being heavy and gently spiced rather than fiery, which is why families from Martindale, Saddleridge and Taradale keep it in their weekly rotation. Every order is cooked to the spice level you ask for, so you can keep it mild for the kids or ask the kitchen to turn up the chilli.
The chicken never touches the sauce until it has been smoked in the clay oven — that is where the faint charcoal note comes from. The gravy is built separately from ripe tomatoes, onions, cashew paste and whole spices, then blended smooth and finished with butter and cream to order. Nothing is pre-portioned in a bag; each pan is finished when you order it.
